Your instructor has over 15 years of teaching experience and a rich history running the award-winning Izakaya in San Francisco. Under the guidance of your expert instructor, originally from Yokohama and a current Tokyo/SF food scene insider, you’ll craft your own bowl of ramen to success!
What you'll learn
  • Knead and roll your own noodle dough.
  • Taste four iconic Ramen varieties (Shoyu, Miso, Tonkotsu, Tantan) while learning about Ramen's rich history, regional traits, and trends in Japan.
  • Prepare delicious toppings like Aji-Tama (soft-boiled eggs) and Chashu (braised pork belly) using the chef’s signature aged sauce.
  • Make and strain your own stock—choose from Tonkotsu Paitan, Chicken Chintan, or a vegetarian option.
  • Craft your own Kaeshi (Ramen soup base).
  • Assemble and cook your custom bowl of Ramen with a variety of toppings, including scallions, bean sprouts, spicy pork, Kikurage mushrooms, and more.

Team building sessions are offered by Mari Takahashi, complimented jointly by her culinary knowledge and corporate-world experience. Takahashi spent many years in the corporate world and knows how important team-building activities are for generating and strenghening bonds between teammates. She has been teaching how to make sushi for 13 years and has made a fun yet educational session that makes sushi team-building the perfect corporate event! These two-hour sessions can conveniently take place wherever suited for the client, including your company's conference room, off-site location, or @nombe kitchen.

Typical exercises start with Takahashi teaching how to make sushi, how to plate them, and how to speak Japanese to everyone. Then the group is divided into smaller teams and given time to create their own sushi as a team. After the time is up, everyone faces the judgement time! The Nombe team will look at each team's presentation carefully, taste the sushi, and quiz everyone on Japanese words, then will choose a winner. The winning team will receive a bottle of Sake.
