Do you really want to know the secret to eating more vegetables? You have to make interesting things with them and Chef Leticia will show you how! In this online cooking class, you will learn how to make two deliciously easy recipes that get creative with vegetables.
You will make:
  • Broccoli Fajitas with Cashew Peanut Vinaigrette
  • Chicken Tortilla Soup
Broccoli has the reputation of being supremely healthy but not that exciting to eat. You'll learn how to make next-level fajitas featuring broccoli and you'll make a healthful chicken tortilla soup garnished with queso blanco, cilantro, and more.
Chef Leticia will walk you through each step, offering her expert guidance and all her tips for making amazing Latin flavored dishes. You'll get a list of ingredients to prep beforehand and when it's time to join the online class, you'll have a fun time making your meal together.
When your class is over, you'll have fajitas and soup to enjoy and new healthy recipes to make over and over again.
Please Note:
Students should have all ingredients pre-measured and have kitchen pots, pans, and utensils ready to go before joining your class.

What to bring
  • 1 lb broccoli with long stems
  • 1 lime
  • 1 lemon
  • 2 navel oranges
  • 1 bunch cilantro
  • 1 garlic head
  • 2 onions
  • 1 ½ lbs plum tomatoes (or one 28oz can crushed tomatoes)
  • 1 avocado
  • 8 oz queso blanco (or feta cheese)
  • Two chicken breasts cooked from 1 roasted chicken
  • Olive oil
  • Canola 0il for frying
  • Kosher salt
  • Fresh black pepper

Leticia graduated from the Culinary & Pastry Arts program at the International Culinary Center (former French Culinary Inst.) and worked at Le Cirque, La Caravelle, & La Grenouille in NYC.
She later studied journalism and is the author of 3 cookbooks, becoming a nationally recognized food personality in the U.S, making frequent appearances on major network programs such as The Today Show, Fox News, and CBS The Couch. She was an NBC correspondent for the 2016 Summer Olympics in Rio and worked with Merck as the spokesperson for a healthy living campaign.
Her work has been featured at a variety of web and print media outlets such as The New York Times, Fine Cooking Magazine, Saveur, The Washington Post, Eating Well, and Bon Appetit. She is part of the Broadcast Committee for James Beard Foundation and teaches amazingly inspiring virtual cooking classes.
